How the Grinch Stole...Red and Green Christmas Cupcakes

These are some cupcakes that I CAN share the recipe of...because I made it up (well mostly)...

These cupcakes are super cute and Christmasy! AND they are SUPER EASY!
These cupcakes reminded me A LOT of How the Grinch Stole Christmas...hence the name.

Cake:

The cake is a cake mix based cake. I used half of a funfetti cake mix (since I only needed a small batch)... I added 3 eggs and then instead of the oil and water that is says to add on the box I added milk and melted unsalted butter (in the same amount).

Then divide the cake mix putting half of it in a separate mixing bowl. Color half of it green and half of it red with food coloring.

Then here is the cool part... Use a cupcake batter divider. Place the divider in the middle of the cupcake slot. Using a spoon fill to about 2/3- 3/4 full on each side (one side with the red batter, and one side with the green batter). This is messy at first (so keep a paper towel handy) but eventually you will get the hang of it!

You can get a cupcake batter divider HERE on amazon (it looks like this). Or I just happened across mine at my local grocery store! (and it was much cheaper there!- so keep an eye out!)  It's decreased in price on Amazon since I bought mine!











Unfortunately the frosting recipe I cannot share... I used a recipe from this book... (I know... AGAIN!!)
It is a light fluffy frosting recipe perfect for kids (and it makes enough to frost 24 cupcakes!

The recipe I used is the "Whipped Grocery" recipe from this book.
It is delicious... I so wish I could have eaten all of it! (except it is not dairy free so that would have been a really bad idea...) but I just COULDN'T STOP "taste testing" it! mmmmm...

I am in love with this book... plus it is the most adorable ever...

I'm dreaming of a...A Red Velvet Christmas

The best way to spread Christmas Cheer is...

By making Christmas Cupcakes!

These first Christmas Cupcakes are fondly named "Velveteen Christmas" they are a traditional Red Velvet Cake with Cream Cheese frosting decorated festive for the Holiday Season. 

These were a hit at my Church Christmas Party!

The recipe comes from The Cake Boss himself! Buddy!

There are a lot of great classic recipes in this book and a lot of tips. He even shares how to pipe those cute flower cupcakes they make at the bakery. Most of the tips in this book though are for actual cakes, not cupcakes. However, the recipes are great for either.

My tip for this cake recipe is to bake it for MUCH less time than it says in the book (also it will make more than 24 cupcakes). The recipe doesn't have a baking time for cupcakes and mine were slightly overdone (but still delicious). I would start them at 20 min and then see where you are... If a toothpick comes out clean when you insert it in the cupcake or if when you touch the cupcake it doesn't leave a dent, then they are done! 

Still super delicious and very fluffy on the inside though.


The frosting was the best cream cheese frosting I ever made! Ugh! I wish I could share it with you! It comes from this ADORABLE book again... Frostings.... seriously I want to be Courtney Whitmore! ... she is adorable!

I have only made two recipes from this book so far. Both of them were AMAZING! I love this book, and it is hands down the MOST ADORABLE book I have ever seen... I highly recommend it for anyone on your list who loves baking or especially frosting!


Like I said, the cream cheese frosting recipe from this book was the best one I ever made.... I will be using this recipe from now on!



THE BOWS...Are probably my favorite part of these cupcakes! (even though the actual cupcake is amazing as well)... I happened across the bows at my local Walmart. They are the perfect mini bows for cupcakes! They came in a pack of ten that cost 97 cents (pretty sure)... AMAZING! and Perfect for Christmas Cupcakes!

Dairy Free- Chocolate Candy Cane Cupcakes!

I love Christmas!!!!!!!! I've already made a few different cupcakes this holiday season, but I made one today that stopped me in my tracks....


Seriously... AMAZING!!!

I can't have dairy, so I'm always on the hunt for great dairy free cupcakes, and especially FROSTING.

Today I even amazed myself!

First off... I love this book!!! It is so cute and I have loved every frosting I have made from it...
THIS frosting DOESN'T come from this book... but it did help me figure out how I could make a dairy free frosting...


OKAY... here is the best part!!!!


Dairy Free- CANDY CANE FROSTING
1 c. Crisco shortening
1/2 c. dairy free "butter" spread* (use regular unsalted butter room temp if not going dairy free).
6 c. powdered sugar
4 Tbs water
1 1/2 Tbs clear vanilla extract
4-5 peppermint candy canes blended to a fine powder with your blender/magic bullet. I use my magic bullet for this recipe and it makes it SO easy!

In a stand mixer with a paddle attachment cream the "butter"and shortening together. When they are creamy add the powdered sugar, while mixing, 1/3-1 c. at a time (whatever works best for you-- you just want to add it in increments). About halfway through adding powdered sugar add 2 Tbs water. Keep mixing and add the rest of the powdered sugar in increments. Then add the vanilla and the other 2 Tbs water. Also add the candy cane powder. Mix on low-medium for 5 min until nice and fluffy!

With a piping bag and a big tip, pipe the frosting onto your cupcakes and enjoy!!

Seriously... I LOVE that I can eat this frosting! My house smells AMAZING and I had to force myself to stop eating the dang frosting and actually pipe it on my cupcakes. SO Candy-cane-y and DELICIOUS!!!

Now for the cake... (also dairy free)

Dairy Free- Chocolate Cupcakes
These are a cake mix-based cupcake so they are super easy... Here's what you do.

1 box Chocolate Fudge Cake mix (check the ingredients! Certain brands don't have milk in them, and others do... so if you are looking for dairy free check the ingredients. I have found the Western Family brand doesn't have milk usually).
3 x-large eggs
1/2 cup. veggie oil (or use melted butter for non dairy free)
1 1/3 c. almond milk (or reg milk if you don't want to go dairy free).

Preheat oven to 350 F.
Whip the eggs a little with a fork in a small bowl. Then add them to the mixing bowl with the oil. With a hand mixer mix those together. Whisk up the cake mix in another mixing bowl to get the lumps out. Then add the cake mix to the egg-oil mixture a little at a time (alternate between adding cake mix and almond milk). Add to cupcake pan with liners and bake 20-25 min.

When a toothpick comes out clean then they are done. Take them out and let them cool...



I think this is my favorite frosting that I have ever made. I hope you enjoy it as much as I did!

Cami's Favorite Cookies- Pumpkin-Spice-Choco-Chip Cookies

My favorite cookies are the easiest cookies to make... Unfortunately they are pumpkin spice, which means they are only really publicly acceptable in the fall (although, I secretly love them all year)...

They are Pumpkin-Spice-Choco-Chip Cookies or "Cami's Favorite Cookies."

These cookies require 3 ingredients 
(well technically 4... but I don't really count the fourth)

All you do is mix all these ingredients together- I like to mix the cake mix a little on it's own first to get out the lumps and then add the pumpkin a little at a time. Then I add the choco chips and the flour at the end.
Heat your oven to 350F and bake for 15-20 min...


These are the moistest, most delicious, and most amazing cookies you will ever eat....
 Every time I make them I think I eat about 20 of them...


Good news is THEY ARE (MOSTLY) DAIRY FREE!!!!
(Other than the Chocolate Chips they are dairy free)
 (I'm sure you could find dairy-free choco chips if you really wanted to.)

**NOTE** 
If you are making them dairy free then just make sure your spice cake mix doesn't contain milk- some do some don't.


I challenge you to take 30 min today and make these cookies for you or for someone you think could use a pick-me-up!! (That time includes baking time- which doesn't really count because you can do other stuff while they bake!)

There is a reason they are "Cami's Favorite Cookies."
(because they are freaking delicious!!!!)
 You won't regret making them! 
(though your butt fat might...)

I am a Mormon (a member of the Church of Jesus Christ of Latter-Day Saints)...


I recently stumbled across this blog post on Facebook, and I really enjoyed it! It's "Ten Reasons You Should be a Mormon". I really enjoyed it, and I think you will too!  My favorite reason was reason number 1 "Jesus Christ is the Center of our Faith." Because we are nicknamed "Mormons" many people don't realize that we are Christians,  we worship Jesus Christ as the center of our faith. This is very important to me- my faith in Jesus Christ keeps me going- I pray constantly!

PB&J Cupcakes, Floods, and Hospital Sleepovers

So July has been nuts... There has been some fun stuff like family reunions, holidays, and new cupcakes. But this month has also been one of the most challenging. Starting with a flood and ending with an overnight hospital stay...

I know you're probably wondering, what does this have to do with PB&J but I promise it connects and we'll get there eventually. It begins with the flood...

We live in a basement apartment. One night at the beginning of July (ish) there was a pretty big rainstorm. When I woke up the next morning and walked into the main part of the house or was like walking on a sponge! It was crazy! (And not what I wanted to see at 5:30 am when I'm half asleep and my husband is going to work). Turns out the water had come in one of the two windows in our apartment and flooded our entire main living space. What drives me crazy is I woke up I'm the middle of the night, went out into the living room, heard the rain on the window that sounded like Niagra Falls against our window pane, and went over and felt around the window sill to check (I was worried because it sounded so bad) and it was totally dry so I went back to bed... Ugh! Drives me crazy! 

We lived without carpet in a house that smelled like a wet dog and was loud like an airplane (cause of the fans) for a few days... Then the landlords decided they better just replace it and now we have great carpet. Luckily our furniture was fine and only one thing was damaged from the flood... Unfortunately it was my husband's MacBook Pro which was leaned up against the couch the night before...there was no saving the laptop but luckily we still have my Mac air and our ipad, so we'll be good for our last year of school hopefully...

Fast forward a few weeks... As July is winding down...To this morning...Where the next terrible, awful thing happened. My husband has chronic neck pain from an accident several years ago, but normally it's more of a discomfort and every once in a while it will hurt a little more for a day or two then go away...unfortunately when the severe pain began yesterday afternoon that was not the case. He describes this pain being worse than ever before, and with what happened today, I've never seen him in so much pain. He goes to work early, which is why our day began at 4:40 am this morning. He got up this morning with a worse neck pain than even the night before and passed out in the bathroom. I heard him calling for me and ran in got him a drink and was trying to help him (and had his mom on the phone since I had no idea what to do). Suddenly he began saying he couldn't see. His eyes were wide open and he was talking to me in a freaked out but coherent way and he said everything was black. That lasted for a couple minutes and I called 911 (first time ever). The paramedics came to our house at like 4:40. They checked him out, said he was fine to move and walk, so they let me drive him to the ER after they helped him up to the car (which I couldn't have done since he could barely move his upper body). We went into the ER and they did some tests and the the doctors announced that they wanted to admit him to the hospital where they could do more tests. The hospital where we were is brand new, so only the ER wing is open, so now we are at about 9 am when they give us an ambulance ride to a hospital further north where they can admit him (I rode shotgun).

At this hospital they've done a lot of tests to make sure it wasn't his heart that caused the fainting (so far, from what they tell us, they say his heart is fine). They've also done an MRI on his neck to see what's causing the pain, we have to wait until tomorrow to see what the doctor says about that test. They are keeping us here overnight for observation, and hopefully we can get home tomorrow. But that's where I am now... Sitting in my husband's hospital room, watching him sleep, while I'm writing this post and thinking about how I will probably get 2 hours tops sleep tonight (if I'm lucky)... But as long as I'm with him I don't care.

So... To the reason I'm sharing the PB&J cupcake recipe with this 1. Is because its the only pictures of cupcakes I have on the ipad (most of the rest are on the hard drive we rescued from the dead computer) and 2 because today when we were here Stephens brother and his cute family came up. They asked if they could bring anything up, and all Stephen wanted was a PB&J... Hence the sharing of the PB&J cupcakes...



Unfortunately this recipe isn't my own creation, and it comes from a book so I can't share the recipe online (it comes from Your Cup of Cake which was mentioned in a previous post) but I can tell you generally what's in it and you can give it a shot or get/borrow the book...this is a cake 
 Mix recipe so it would actually be pretty easy to fudge.

Peanut Butter Cupcake
Sour cream
Eggs

Then these babies have a yummy layer of peanut butter fudge ganache 

To top it all off (here's the jam part) a strawberry jam buttercream
Strawberry jam
A small amount of strawberry gelatin for color and flavor

And that's the basics! Enjoy!

I made these for an extended family dinner we went to on Pioneer Day and they were a big hit! The leftovers I took to work and my coworkers loved them too! One said it was one of the best frostings she has had, and she eats a lot of frostings. :)

Anyways, I hope your July has been much better than ours! We have been so lucky to have such great friends and family looking out for us, and helping us. It's my sister's birthday today and she even came up and brought us a bunch of stuff and had dinner with us in the hospital! She is amazing! We are so blessed to have people like her helping us along. And we are so blessed to be going through all this together.

Dairy Free/ Egg Free Chocolate Cupcakes



As you may know, I can't have dairy... so yes, I cannot eat the cupcakes I make! Other than little taste tests here and there.

But as of yesterday that is no longer the case! 

Yup! Dairy Free Chocolate Cupcakes!

They are AMAZING!!!! (Pretty sure I've already had 5....)

And they also happen to be egg free for those with that allergy as well! 


Recipe
The recipe comes from [here] and was slightly adapted by me.

Ingredients:
1 1/8 tsp baking soda
1/2 c. canola oil
1/2 c. cocoa powder
1 7/8 c. all purpose flour
3/4 tsp salt
1 1/2 c. sugar
1 1/2 tsp vanilla
1 1/2 c. almond milk
1 1/2 tsp cider vinegar

Directions:
1. Preheat oven to 375 F
2. Whisk the dry ingredients together in a bowl
3. In a mixer combine the oil, vanilla, vinegar, and almond milk
4. In the mixer gradually combine the dry ingredients with the wet ingredients until well combined.
5. Scoop into cupcake pans and bake for 20-25 min.
6. Let cool and frost!


I didn't actually make this frosting. It came from a big 5 gallon tub that my best friend gave me to frost the cupcakes for her wedding at the beginning of May. It is a vanilla shortening frosting with no dairy! And it is awesome and delicious! It comes from Sam's Club and I love it!

Maple Bacon Wedding Cupcakes

So my big sister just got married at the end of April, and asked me to make some Maple Bacon cupcakes for the reception.


If you know my family you know we are HUGE fans of BACON! 
"Everything tastes better with bacon" is our Family Motto!
But...Maple Bacon at a wedding? YES!!!!! Here's the Story:

When her and her now husband first "hung out" they went to go pick up a bacon pie at the village inn.
Hence the maple bacon cupcakes!


Her colors were coral and gold, so I made many different cupcake toppers that you'll see around this post.

Maple Bacon is one of my FAVORITE cupcake flavors to make! They are amazing!!!  
It's like breakfast in a cupcake.

It is a slightly spiced cake with maple buttercream and candied bacon on top!

Unfortunately the recipe I use for these comes from a cupcake recipe book from Your Cup of Cake and I can't find it posted on her website, so I can't post the recipe on my blog... It is a cake mix based cupcake... as are all the cupcakes in her book. I love this girl! All these cupcakes look amazing and they are all SO EASY!!








My cupcakes were not the only ones featured at the wedding... However mine were the BEST! :)

One year ago today...

This post doesn't have much to do with cupcakes, though there is a picture of cupcakes,

but today is a very special day for me, and I wanted to share why.

Homemade Chocolate and Caramel Cupcake Recipe- Bachelorette Party Two!

These cupcakes were almost the death of me!
 I had made bunches of them the day before the party using this cake mix based recipe...
Then I forgot about them and left them out overnight- the next day they were dry and awful! 
SO... then I made a batch of totally homemade chocolates- which turned out great (that's what the pictures are of, I'll share the recipe down a little later)...
Then... I frosted them super cute and they were already to go and THEN.... 
I DROPPED THEM!

These are extra tall Cupcakes... so they are top heavy so my cupcake carrier didn't hold them in place very well. Luckily, when they fell they stayed in the carrier so I just had to scrape off the frosting and re-pipe.

Thanks to my AMAZING husband I got these cupcakes done for the party! 
(and only cried for a little after I dropped all my hard work!)
 
Chocolate cupcake, with a rolo center,  caramel buttercream, topped with heath bar pieces.

 Homemade Chocolate Cupcake Recipe
Ingredients: 
1/2 c. cocoa powder
1 c. boiling water
1 1/3 c. all purp. flour
2 tsp baking powder
1/4 tsp salt
1/2 c. unsalted butter (room temp).- (if use salted butter then omit the 1/4 tsp salt)
1 c. white sugar
2 large eggs
2 tsp vanilla
Rolos- Frozen (optional)




 






Directions: 
1. Preheat oven to 375F
2. In a small bowl stir until smooth the cocoa powder and the boiling water- let sit until room temp
3. In another bowl whisk the flour, baking powder, and salt.
4. In your mixer, combine the butter and sugar until fluffy.
5. Add the eggs one at a time and the vanilla.
6. Stir in the flour mixture, and stir until incorporated.
7. Add the cooled cocoa mixture.
8. Distribute into cupcake pans and press a frozen rolo into the cupcake (optional)
9. Bake for 18-22 min.

Makes about 16 cupcakes. 

I added the Rolos and the Caramel frosting because Julie's (the bachelorette) FAVORITE cupcakes were the ROLO cupcakes that I made a while back.

 To top the cupcakes I made these, since it was another Bachelorette Party! Aren't they cute!? 

I just used whatever scraps of paper etc I had lying around, and they were super fun to make! Cut two hearts in a "skin" color to make the background. Then cut two more hearts in pattern paper, and cut the hearts down to the style you want. Then add some glitter, lace, ribbon, jewels, puff paint, etc. and hot glue on a long toothpick!

I can't find the source that originally gave me this idea- but I'll keep looking!
