Cake:<br />

The cake is a cake mix based cake. I used half of a funfetti cake mix (since I only needed a small batch)... I added 3 eggs and then <u>instead </u>of the oil and water that is says to add on the box I added <u>milk and melted unsalted butter</u> (in the <b>same amount</b>).<br />
<br />
Then divide the cake mix putting half of it in a separate mixing bowl. Color half of it green and half of it red with food coloring.<br />
<br />
Then here is the cool part... Use a cupcake batter divider. Place the divider in the middle of the cupcake slot. Using a spoon fill to about 2/3- 3/4 full on each side (one side with the red batter, and one side with the green batter). This is messy at first (so keep a paper towel handy) but eventually you will get the hang of it!<br />

Unfortunately the frosting recipe I cannot share... I used a recipe from <a href="http://www.amazon.com/gp/product/1423631951/ref=as_li_qf_sp_asin_il_tl?ie=UTF8&camp=1789&creative=9325&creativeASIN=1423631951&linkCode=as2&tag=comm083-20&linkId=TVUAZU2VW7DDVTQJ" target="_blank">this book</a>... (I know... AGAIN!!)<br />
It is a light fluffy frosting recipe perfect for kids (and it makes enough to frost 24 cupcakes!<br />

The recipe I used is the "Whipped Grocery" recipe from this book.<br />
It is delicious... I so wish I could have eaten all of it! (except it is not dairy free so that would have been a really bad idea...) but I just COULDN'T STOP "taste testing" it! mmmmm...<br />

If a toothpick comes out clean when you insert it in the cupcake or if when you touch the cupcake it doesn't leave a dent, then they are done! </span></div>

When they are creamy add the powdered sugar, while mixing, 1/3-1 c. at a time (whatever works best for you-- you just want to add it in increments). About halfway through adding powdered sugar add 2 Tbs water. Keep mixing and add the rest of the powdered sugar in increments. Then add the vanilla and the other 2 Tbs water. These are a cake mix-based cupcake so they are super easy... Here's what you do.<br />

Certain brands don't have milk in them, and others do... so if you are looking for dairy free check the ingredients. I have found the <i>Western Family</i> brand doesn't have milk usually).<br />
3 x-large eggs<br />

Preheat oven to 350 F.<br />
Whip the eggs a little with a fork in a small bowl. Then add them to the mixing bowl with the oil. With a hand mixer mix those together. Whisk up the cake mix in another mixing bowl to get the lumps out. Then add the cake mix to the egg-oil mixture a little at a time (alternate between adding cake mix and almond milk). Add to cupcake pan with liners and bake 20-25 min.<br />

When a toothpick comes out clean then they are done. Take them out and let them cool...<br />

There has been some fun stuff like family reunions, holidays, and new cupcakes. But this month has also been one of the most challenging. We live in a basement apartment. One night at the beginning of July (ish) there was a pretty big rainstorm. When I woke up the next morning and walked into the main part of the house or was like walking on a sponge! It was crazy! (And not what I wanted to see at 5:30 am when I'm half asleep and my husband is going to work). Turns out the water had come in one of the two windows in our apartment and flooded our entire main living space. What drives me crazy is I woke up I'm the middle of the night, went out into the living room, heard the rain on the window that sounded like Niagra Falls against our window pane, and went over and felt around the window sill to check (I was worried because it sounded so bad) and it was totally dry so I went back to bed... Ugh! Drives me crazy! </div>

We lived without carpet in a house that smelled like a wet dog and was loud like an airplane (cause of the fans) for a few days... Then the landlords decided they better just replace it and now we have great carpet. Luckily our furniture was fine and only one thing was damaged from the flood... Unfortunately it was my husband's MacBook Pro which was leaned up against the couch the night before...there was no saving the laptop but luckily we still have my Mac air and our ipad, so we'll be good for our last year of school hopefully...</div>

Fast forward a few weeks... As July is winding down...To this morning...Where the next terrible, awful thing happened. My husband has chronic neck pain from an accident several years ago, but normally it's more of a discomfort and every once in a while it will hurt a little more for a day or two then go away...unfortunately when the severe pain began yesterday afternoon that was not the case. He describes this pain being worse than ever before, and with what happened today, I've never seen him in so much pain. He goes to work early, which is why our day began at 4:40 am this morning. He got up this morning with a worse neck pain than even the night before and passed out in the bathroom. I heard him calling for me and ran in got him a drink and was trying to help him (and had his mom on the phone since I had no idea what to do). Suddenly he began saying he couldn't see. His eyes were wide open and he was talking to me in a freaked out but coherent way and he said everything was black. That lasted for a couple minutes and I called 911 (first time ever). The paramedics came to our house at like 4:40. They checked him out, said he was fine to move and walk, so they let me drive him to the ER after they helped him up to the car (which I couldn't have done since he could barely move his upper body). We went into the ER and they did some tests and the the doctors announced that they wanted to admit him to the hospital where they could do more tests. The hospital where we were is brand new, so only the ER wing is open, so now we are at about 9 am when they give us an ambulance ride to a hospital further north where they can admit him (I rode shotgun).</div>

At this hospital they've done a lot of tests to make sure it wasn't his heart that caused the fainting (so far, from what they tell us, they say his heart is fine). They've also done an MRI on his neck to see what's causing the pain, we have to wait until tomorrow to see what the doctor says about that test. They are keeping us here overnight for observation, and hopefully we can get home tomorrow. But that's where I am now... Sitting in my husband's hospital room, watching him sleep, while I'm writing this post and thinking about how I will probably get 2 hours tops sleep tonight (if I'm lucky)... But as long as I'm with him I don't care.<br />

1 7/8 c. all purpose flour</div>

3/4 tsp salt</div>

1 1/2 c. sugar</div>

1 1/2 tsp vanilla</div>

1 1/2 c. almond milk</div>

1 1/2 tsp cider vinegar</div>

Directions:</div>

1. Preheat oven to 375 F</div>

2. Whisk the dry ingredients together in a bowl</div>

3. In a mixer combine the oil, vanilla, vinegar, and almond milk</div>

4. In the mixer gradually combine the dry ingredients with the wet ingredients until well combined.</div>

5. Scoop into cupcake pans and bake for 20-25 min.</div>

I didn't actually make this frosting. It came from a big 5 gallon tub that my best friend gave me to frost the cupcakes for her wedding at the beginning of May. It is a vanilla shortening frosting with no dairy! And it is awesome and delicious! It comes from Sam's Club and I love it!</div>

These cupcakes were almost the death of me!</div>

Then I forgot about them and left them out overnight- the next day they were dry and awful! </div>

SO... then I made a batch of totally homemade chocolates- which turned out great (that's what the pictures are of, I'll share the recipe down a little later)...</div>

I wanted to make cupcakes , but didn't want too many, so this is a half batch recipe-</div>

This is also a super EASY recipe because it is again cake mix based! </div>

(What can I say, I have very little time right now!)</div>

But this cake based recipe is entirely my creation! Yup that's right! No link to where I got the recipe because it came from my own noggin! (GO CAMI!)</div>

1/2 a funfetti cake mix<br />
1/2 a vanilla pudding mix (large size)<br />
1/2 c. Oil (I used canola)<br />
1/2 c. Almond milk (original)<br />
1/2 tsp vanilla<br />
2 eggs (beaten lightly)<br />

Preheat oven to 350 F<br />
Mix all the ingredients together in your stand mixer. I'm serious just throw them all in randomly on this one!<br />
Bake for 18-22 min<br />

I do regret the frosting and filling I used in these cupcakes... I tried something new on those and they didn't pan out quite like wanted.... I will definitely go back to what I usually do next time!</div>

So... want a recipe for the <u><i>Easiest </i></u>vanilla cupcakes you will ever make!<br />
They <span style="font-family: Georgia, "Times New Roman", serif;">MIGHT <span style="font-family: inherit;">be "cheating" just a little bit</span></span>, but what can I say, they are fabulous for when you need a deliciously-moist cupcake SUPER FAST and with little mess!<br />
<br />
<span style="font-size: large;"><br /></span>
<span style="font-size: large;">Ingredients: </span><br />
*1 yellow cake mix <br />
*3 eggs<br />
*Melted butter (double the amount of the oil on the box and put that much butter in and melt it)<br />
*Milk (sub this in for the water)<br />
<span style="font-size: large;">Here's How:</span><br />
1. Set the oven to 350F <br />
2. Beat the eggs with a mini whisk in a small bowl- beat them quite a bit!<br />
3. Pour the cake mix in a different bowl and whisk this with a big whisk (mix this a lot too!)<br />
4. Mix the beaten eggs, the melted butter with a hand mixer (I love this part too! no need to dirty your stand mixer for the cake!)<br />
5. Mix in about half the whisked cake mix then whisk about half the milk. Then mix in the other half of the cake mix and the <br />
then mix in the rest of the milk.<br />
6. Bake for about 20-25 min. (I would check them before 20 though, because your oven probably doesn't cook as <i>desperately s-l-o-w</i> as mine!<br />
7. And finally, top with your favorite frosting! <br />

Fill your mini cupcake pan with liners<br />
1. Put some of the crust mixture at the bottom of each mini cupcake wrapper <br />
2. Push down the crust in each wrapper with your fingers.<br />
3. Put a little scoop of jam in the middle of each.<br />
4. Take your cream cheese mixture and fill each cupcake 3/4 full (I didn't fill mine full enough so make sure they are really 3/4 full not 2/3 like mine ended up being)<br />
5. Tap down the pan on the counter and fill some more.<br />
6. Bake mini cupcakes at 325F for about 6 min then REDUCE heat to 275F and continue baking for about 15 min (? Cupcakes will be done when they look like they are firming a little on top-- you can touch it lightly with your finger and if it doesn't sink down then they are done).<br />
<br />
<i>Remove and cool</i><br />
<br />
<b>Put your mixing bowl and whisk attachment in the freeze<i><span style="font-size: large;">.</span></i> </b><br />
<br />
<b>Frosting- </b><br />
1. Whip the whipping cream and cream cheese on high for about 2 min then pipe on your cupcakes!<br />
<br />
Top with <span style="font-family: "Helvetica Neue",Arial,Helvetica,sans-serif;">fresh strawberries</span> and <span style="font-size: large;">enjoy!</span><br />

I've definitely been feeling the stress of school already this semester, and the freezing icy cold is NOT helping at all (thanks for asking...yea... I think I'm coming down with something)...<br />
Anywho... after spending all week in class and studying (18 credits does something to everything else in your life...<u>it gets rid of it, that's what!)</u> and all day today studying with my cute hubby... I decided that he and I needed a little break tonight... Pizza (my favorite food), a movie (the Avengers), and a new dessert (<b>OREO TRUFFLES</b>!)<br />

So remember the Cami's Cupcakes <span style="font-size: small;">MILK'S FAVORITE CUPCAKE</span>? aka OREO CUPCAKES from a while back?? <i>whelll</i>.... in honor of those delicious babies I decided to call these <span style="font-size: large;"><span style="font-family: "Helvetica Neue",Arial,Helvetica,sans-serif;"> </span></span><br />
<span style="font-size: small;"><span style="font-family: "Helvetica Neue",Arial,Helvetica,sans-serif;">"MILK'S FAVORITE...TRUFFLE..." </span> </span><br />
taaadaaa!<br />

These were the best thing I could have made tonight... these Oreo Truffles took me about 30 min tops to make (not counting the freezing wait time which isn't really that long anyways.)<br />
<br />
Here's how... I found the recipe on this <a href="http://www.cookingclassy.com/2012/12/oreo-truffles-two-ways/" target="_blank">site</a> then did a little to make it my own. SOOOO here goes.<br />
<br />
<span style="font-size: large;"><b>RECIPE:</b></span><br />
<span style="font-size: x-small;">(I halfed the original recipe and made 12 oreo truffles)</span><br />
<br />
<i>Here's what you need...</i><br />
<br />
18-21 Oreos (regular stuffed)<br />
4 oz cream cheese<br />
melty white chocolate<br />
Peanut butter chips (optional) <br />
baking sheet<br />
parchment paper/wax paper<br />
<br />
<b>1.</b> Finely crush 18 Oreos in a food processor (or a plastic bag with a rolling pin- but I REALLY recommend the food processor!)- and when I say FINELY crushed I mean it!!<br />
<b>2. </b>Using your mixer (or a bowl and a spoon) thoroughly mix the Oreo crumbs and cream cheese until everything is Moist (i know I hate that word too... so sorry...)<br />
<b>3.</b> Using an ice cream/cookie dough scoop, scoop 1" balls of deliciousness onto a baking sheet covered with parchment/wax paper.<br />
<b>4.</b> Take those messy looking balls and use your hands to roll them into nice looking balls (the best you can!)-- here's a <a href="http://www.youtube.com/watch?v=Q5sGE52ujs4" target="_blank">clip</a> for tips!<br />
<b>5.</b> Freeze them in the freezer for as long as you want (the other recipe says 10 min is good- I froze mine for longer because I was studying but just until they are dipping ready.<br />
<b>6.</b> Melt white chocolate in 30 sec increments (stirring in between). Using a long toothpick for a fondu fork dip the balls in the chocolate (see the clip in #4 for more how too).<br />
<b>7.</b> Then I crushed the other 3 Oreos, melted the peanut butter chips, drizzled the truffles with the melted peanut butter chips and sprinkled with Oreo Crumbs...<br />
<br />
Then freeze them for a little more until the chocolate is all the way hardened. And then you can stick them in mini cupcake wrappers to make them look <u><b>super</b></u> cute!<br />

(I'm still totally in love with them!)</div>

If you need extra help the dollhouse bake shoppe--link above-- put pictures with her directions so it's super easy to follow).</span></span></span></div>

I got a variety of comments on these cupcakes! From "those look disgusting!" to "gross" and to "awesome"! I think they are AWESOME! </div>

I used more strawberry jam on these little Brainies to make it look like blood... and I piped the frosting by just cutting a piping bag to the size hole I wanted and squiggled it around a bit...</div>

I had to try to make these 2 TIMES before they worked! So here's what went down... I learned to ALWAYS ALWAYS read how many oz. are in a can, even if you think you totally know what's up... My mom always used the big cans of pumpkin... so I thought that's how they always came, and some how-- in my head-- I thought the big can was 15 Oz! It's SO NOT!!! So the first time.. my cupcakes ended up more like mushy hockey- pucks...</div>

So you remember that time, when I had a life that allowed me the honor of having time for super fun blogging and cupcake making? Yah? me to. and Well, that's pretty much gone now...<br />

BUT (yay for happy news!) I had time to try my hand at two new types of cami's cupcakes in the last couple months, and here they are (hallelujah!) <br />
