Dairy Free/ Egg Free Chocolate Cupcakes



As you may know, I can't have dairy... so yes, I cannot eat the cupcakes I make! Other than little taste tests here and there.

But as of yesterday that is no longer the case! 

Yup! Dairy Free Chocolate Cupcakes!

They are AMAZING!!!! (Pretty sure I've already had 5....)

And they also happen to be egg free for those with that allergy as well! 


Recipe
The recipe comes from [here] and was slightly adapted by me.

Ingredients:
1 1/8 tsp baking soda
1/2 c. canola oil
1/2 c. cocoa powder
1 7/8 c. all purpose flour
3/4 tsp salt
1 1/2 c. sugar
1 1/2 tsp vanilla
1 1/2 c. almond milk
1 1/2 tsp cider vinegar

Directions:
1. Preheat oven to 375 F
2. Whisk the dry ingredients together in a bowl
3. In a mixer combine the oil, vanilla, vinegar, and almond milk
4. In the mixer gradually combine the dry ingredients with the wet ingredients until well combined.
5. Scoop into cupcake pans and bake for 20-25 min.
6. Let cool and frost!


I didn't actually make this frosting. It came from a big 5 gallon tub that my best friend gave me to frost the cupcakes for her wedding at the beginning of May. It is a vanilla shortening frosting with no dairy! And it is awesome and delicious! It comes from Sam's Club and I love it!

Maple Bacon Wedding Cupcakes

So my big sister just got married at the end of April, and asked me to make some Maple Bacon cupcakes for the reception.


If you know my family you know we are HUGE fans of BACON! 
"Everything tastes better with bacon" is our Family Motto!
But...Maple Bacon at a wedding? YES!!!!! Here's the Story:

When her and her now husband first "hung out" they went to go pick up a bacon pie at the village inn.
Hence the maple bacon cupcakes!


Her colors were coral and gold, so I made many different cupcake toppers that you'll see around this post.

Maple Bacon is one of my FAVORITE cupcake flavors to make! They are amazing!!!  
It's like breakfast in a cupcake.

It is a slightly spiced cake with maple buttercream and candied bacon on top!

Unfortunately the recipe I use for these comes from a cupcake recipe book from Your Cup of Cake and I can't find it posted on her website, so I can't post the recipe on my blog... It is a cake mix based cupcake... as are all the cupcakes in her book. I love this girl! All these cupcakes look amazing and they are all SO EASY!!








My cupcakes were not the only ones featured at the wedding... However mine were the BEST! :)


Oh my gosh! I just love these!!

One year ago today...

This post doesn't have much to do with cupcakes, though there is a picture of cupcakes,

but today is a very special day for me, and I wanted to share why.

Homemade Chocolate and Caramel Cupcake Recipe- Bachelorette Party Two!

These cupcakes were almost the death of me!
 I had made bunches of them the day before the party using this cake mix based recipe...
Then I forgot about them and left them out overnight- the next day they were dry and awful! 
SO... then I made a batch of totally homemade chocolates- which turned out great (that's what the pictures are of, I'll share the recipe down a little later)...
Then... I frosted them super cute and they were already to go and THEN.... 
I DROPPED THEM!

These are extra tall Cupcakes... so they are top heavy so my cupcake carrier didn't hold them in place very well. Luckily, when they fell they stayed in the carrier so I just had to scrape off the frosting and re-pipe.

Thanks to my AMAZING husband I got these cupcakes done for the party! 
(and only cried for a little after I dropped all my hard work!)
 
Chocolate cupcake, with a rolo center,  caramel buttercream, topped with heath bar pieces.

 Homemade Chocolate Cupcake Recipe
Ingredients: 
1/2 c. cocoa powder
1 c. boiling water
1 1/3 c. all purp. flour
2 tsp baking powder
1/4 tsp salt
1/2 c. unsalted butter (room temp).- (if use salted butter then omit the 1/4 tsp salt)
1 c. white sugar
2 large eggs
2 tsp vanilla
Rolos- Frozen (optional)




 






Directions: 
1. Preheat oven to 375F
2. In a small bowl stir until smooth the cocoa powder and the boiling water- let sit until room temp
3. In another bowl whisk the flour, baking powder, and salt.
4. In your mixer, combine the butter and sugar until fluffy.
5. Add the eggs one at a time and the vanilla.
6. Stir in the flour mixture, and stir until incorporated.
7. Add the cooled cocoa mixture.
8. Distribute into cupcake pans and press a frozen rolo into the cupcake (optional)
9. Bake for 18-22 min.

Makes about 16 cupcakes. 

I added the Rolos and the Caramel frosting because Julie's (the bachelorette) FAVORITE cupcakes were the ROLO cupcakes that I made a while back.

 To top the cupcakes I made these, since it was another Bachelorette Party! Aren't they cute!? 

I just used whatever scraps of paper etc I had lying around, and they were super fun to make! Cut two hearts in a "skin" color to make the background. Then cut two more hearts in pattern paper, and cut the hearts down to the style you want. Then add some glitter, lace, ribbon, jewels, puff paint, etc. and hot glue on a long toothpick!

I can't find the source that originally gave me this idea- but I'll keep looking!
