Lucky St. Patrick's Day Cupcakes

I know St. Patrick's Day is LONG gone... but now that finals are over (wahoo!) I'm catching up cupcake posts!



These ittie-bitties are a yummy blend of delicious chocolate cupcake with green colored butter cream and green apple Pop Rocks!

I made these for my little 5-year old primary class for St. Pattrick's Day, and they loved them! 
(they may or may not have left a mess of chocolate on the floor! Oops!)

I have ALWAYS wanted to put pop rocks on a cupcake... wasn't as good as I thought it would be (maybe because these were green apple pop rocks with chocolate cupcakes.... but HEY I had to go green!!) But they did add a little fun to the texture!

A tip with the pop rocks: Put the pop rocks on RIGHT before serving! If they sit in the fridge or get wet they will lose their POP!

Funfetti Cupcakes Recipe

These cupcakes are so "FUN"fetti!!

The cake of this cupcake is absolutely amazing!
 (My husband ate like 4 plain cupcakes last night because they were so good!)

I wanted to make cupcakes , but didn't want too many, so this is a half batch recipe-
makes 1 doz. 
This is also a super EASY recipe because it is again cake mix based! 
(What can I say, I have very little time right now!)

But this cake based recipe is entirely my creation! Yup that's right! No link to where I got the recipe because it came from my own noggin! (GO CAMI!)


Ingredients:
1/2 a funfetti cake mix
1/2 a vanilla pudding mix (large size)
1/2 c. Oil (I used canola)
1/2 c. Almond milk (original)
1/2 tsp vanilla
2 eggs (beaten lightly)

Here's How:
Preheat oven to 350 F
Mix all the ingredients together in your stand mixer. I'm serious just throw them all in randomly on this one!
Bake for 18-22 min

Let them cool then frost and fill!!



I do regret the frosting and filling I used in these cupcakes... I tried something new on those and they didn't pan out quite like wanted.... I will definitely go back to what I usually do next time!

They still taste good, (mostly because the cake is AMAZING!!! And I'm sure my nieces will still like them (which is who I made them for anyways!). But next time I would do a different filling and frosting.

Bachelorette Party Cupcakes- "Put a Ring on it!"




These yummy chocolate cupcakes are filled with chocolate whipped mousse, and covered with buttercream frosting, topped with a sparkly "way-too-big-to-be-real" diamond!

These are some of my favorite cupcakes to make, and they are so delicious!

Did I mention they are EASY!!!??
What makes them so easy? They are a cake mix base cupcake!
Before you get mad at me AGAIN for using cake mix, trust me these are AMAZE-BALLS!
You will NOT regret making these!


Ingredients:
1 pkg devil's food cake mix
1 (5.9 oz) chocolate pudding mix
1 c. sour cream
1c. veggie oil
4 eggs (beat these little guys just a tad!)
1/2 c. warm water
1 tsp vanilla


Here's How:
1. Preheat to 350 F
2. Whisk the dry ingredients together in a separate bowl
 3. Beat the wet ingredients (sour cream, veggie oil, eggs, vanilla) in your mixer
4. Beat in half the dry ingredients, then half the warm water, then the other half the dry, then the other half the water.
5. Bake for 18-20 minutes or so. 
6. Let the cupcakes cool then fill and frost!

These are my very favorite chocolate cupcakes to make! I'm sure you'll see this recipe cited a lot in the future...And in the past!

Easiest Vanilla- Baby Boy Shower



It's a BOY!!!
No, I'm not pregnant... but two of my neighbors' sis-in-laws are (both with boys!)
She threw them a super cute Double shower (awww!)
and asked little ol' me to help make the cupcake!
("Yes, I would be honored," I said)

We hand-made each of these little cupcake toppers
they are little onesies with ties!! 
(Teeny tiny onesies and ties are not the easiest things to cut out btw)


So... want a recipe for the Easiest vanilla cupcakes you will ever make!
They MIGHT be "cheating" just a little bit, but what can I say, they are fabulous for when you need a deliciously-moist cupcake SUPER FAST and with little mess!


Ingredients: 
*1 yellow cake mix
*3 eggs
*Melted butter (double the amount of the oil on the box and put that much butter in and melt it)
*Milk (sub this in for the water)
Here's How:
1. Set the oven to 350F
2. Beat the eggs with a mini whisk in a small bowl- beat them quite a bit!
3. Pour the cake mix in a different bowl and whisk this with a big whisk (mix this a lot too!)
4. Mix the beaten eggs, the melted butter with a hand mixer (I love this part too! no need to dirty your stand mixer for the cake!)
5. Mix in about half the whisked cake mix then whisk about half the milk. Then mix in the other half of the cake mix and the
then mix in the rest of the milk.
6. Bake for about 20-25 min.  (I would check them before 20 though, because your oven probably doesn't cook as desperately s-l-o-w as mine!
7. And finally, top with your favorite frosting!


And that's it! See... Piece of Cake! (hahaha! Yeah I'm hilarious!)

These cupcakes are so easy to make, and delicious that you will never want to stop eating them!

A Glimpse into my Mind...


I LOVE BABY SHOWERS!  I'll admit it, sometimes I get baby hungry! But then I remember how  chunky (!!) I was as a baby... and realize I'm not NEARLY ready to push one out of me that is THAT chunky!! Now, I bet you're thinking... "this runty little thing could never be THAT chunky"... well it's true.... 9 lbs 6 ounces at BIRTH!!

Let's just say... my mom is AMAZING!
